Eclair Paris Brest



Paris-Brest is a classic French pastry created in 1910 to commemorate the Paris–Brest–Paris bicycle race. It consists of a choux pastry (a light pastry dough used in many French desserts) filled with hazelnut praline cream and topped with  powdered sugar. The contrast between the crisp pastry shell and the smooth cream filling makes for a delightful texture.
